Let’s talk about the top foods that deplete nutrients. You need to be aware of both sides—foods that provide nutrients and foods that lead to nutrient deficiencies. Limit or cut out these things that deplete you of nutrients: 1. Raw egg whites 2. Refined sugars 3. Refined grains 4. Alcohol 5. Caffeinated beverages 6. Trypsin inhibitors (soy, grains, beans, nuts, seeds, nightshades) 7. Tannins (tea) 8. Excess calcium or consuming a lot of dairy without enough leafy greens 9. Oxalates (spinach, beet greens, almonds, almond flour, chocolate, Swiss chard, grains, beans) 10. Phosphoric acid (soda) 11. Phytates (cereal) Consuming these things can deplete you of important nutrients, including: • Biotin • Vitamin B1 • Zinc • Magnesium • Vitamin C • Certain amino acids • Fat-soluble vitamins • Calcium • Iron • Vitamin B3 • Chromium • Copper • Manganese • Vitamin D These nutrient deficiencies can lead to a myriad of symptoms. Let’s talk about the term GRAS (generally recognized as safe). GRAS applies to chemicals that are in our environment and food. GRAS implies that the chemical is regulated and has been through a lot of safety studies. However, the FDA allows companies to self-certify their chemicals as safe. There are about 10,000 chemicals in our food supply, and 99% of them have not been reviewed for safety. GRAS is more of a loophole that companies use to imply that their chemicals are safe despite outside testing. Six chemicals that are generally recognized as safe:  1. Nitrates:  • Help preserve meat  • Increase shelf life  • Increase the risk of cancer  • Could be in your drinking water 2. BHA: • A preservative  • An endocrine disruptor  • A carcinogen 3. BHT:  • A preservative  • An endocrine disruptor  • Toxic to the liver and kidneys  • Increases cancer risk 4. Potassium bromide:  • A dough conditioner used in many flour products  • A carcinogen  • Can inhibit iodine 5. Brominated vegetable oil: • A flavor stabilizer in beverages  • A flame retardant  • Can harm the nervous system and brain  • Can affect your memory  • Can interfere with iodine 6. Titanium dioxide  • Gives candy a smooth texture and brightens colors  • Can cause DNA damage  • Increases cancer risk  • A heavy metal Our bodies have the ability to get rid of a lot of these poisons if we don’t consume too many. However, some people have a problem with their detoxification genes. This means that they have a lessened ability to get rid of these poisons. The best thing to do is to try to avoid these chemicals and consume foods that support the detoxification process, like cruciferous vegetables. When faced with a gout diagnosis, many people are told to reduce their intake of red meat, organ meats, and shellfish because they contain purines. Purines turn into uric acid, and for a small percentage of people, removing them from the diet may eliminate gout symptoms. However, many people find that avoiding purines alone doesn’t help. Research has found that one of the strongest drivers of gout is insulin resistance. Uric acid is normally eliminated through the kidneys and the gut. When you have insulin resistance, it becomes more difficult for the kidneys to flush out uric acid. As uric acid builds up, it can accumulate in the joints, causing gout pain, or back up into the kidneys and contribute to kidney stones. High-fructose corn syrup can significantly increase uric acid production in the liver. Fructose is found in table sugar, agave nectar, fruit, and fruit juice, and is primarily metabolized by the liver. Hidden glucose from industrial starches can significantly raise insulin levels, contributing to uric acid buildup and joint pain, especially in the big toe and knees. Poor gut health and alcohol consumption may also contribute to gout. Some people experience a gout attack when starting keto, but this is typically temporary and often subsides within the first or second week.
