Amen. ***** RECIPES FROM RITA: ANY FRUIT COBBLER Double ingredients for a 9×13 pan. Ingredients: 6 tablespoons butter, melted 3/4 cup all purpose flour 3/4 cup or so sugar plus a bit extra for sprinkling on top Dash salt 1 teaspoon baking powder 3/4 cup or so milk (enough to make a smoother batter) 1 teaspoon vanilla 3 cups fresh fruit – your choice Instructions: Preheat oven to 350 and place rack on top (this helps brown the top) Pour melted butter in 8×8 pan or 2 quart casserole. Whisk together flour, sugar, salt. Pour in milk and vanilla and whisk to a smooth batter. Pour batter over butter. Don’t stir. Add fruit, then sprinkle with extra sugar. Bake until top is golden and cobbler bubbles, about 40 to 50 minutes or so. As cobbler bakes, fruit falls to the bottom and batter rises to the top, making a cobbler crust.
