Banter Recommendations: • Book: The Bright Years by Sarah Damoff • TV: Your Friends & Neighbours (Apple TV) • TV: The Pitt • TV: The Capture (BBC iPlayer) Recipe of the Week: Easy Sushi Tray Bake 🍣 (quick, family-friendly, and perfect for busy weeknights) Ingredients • 500g sushi rice • 1 tbsp sushi rice vinegar (or mirin) • 2 packs crab sticks (shredded) • 1 pack cooked king prawns (halved) • 2–3 tbsp Kewpie mayonnaise (or regular mayo) • 1 tsp sriracha (adjust to taste) • Black sesame seeds • Japanese seasoning (or furikake) To serve: • Nori sheets • Cucumber (sliced) • Avocado (sliced) • Sushi sauce • Crispy onions Method 1. Cook the sushi rice and mix through the vinegar or mirin. Leave to cool slightly. 2. Press the rice evenly into a large tray or dish. 3. In a bowl, mix the shredded crab sticks and prawns with mayo and sriracha. 4. Spread the mixture over the rice. 5. Sprinkle with sesame seeds and Japanese seasoning. 6. Serve with nori, cucumber, avocado, sushi sauce, and crispy onions. 7. Spoon onto nori, add toppings, wrap, and enjoy.
