The story begins with the influence of French champagne in the 19th century. Champagne, produced in the Champagne region of France using the traditional method of secondary fermentation in the bottle, had already become a symbol of luxury and celebration across Europe. Spanish winemakers, inspired by this prestigious technique, began experimenting with the same method in the wine-growing regions near Barcelona.
