Khaman is a spongy sour cake made of gram flour. It cooked with the help of steam and very less oil is used so it healthy as well as delicious. For preparation * 1 Cup gram flour (besan) * Pinch of Turmeric Powder (Haldi) * 1 Cup curd (Dahi) * Salt as per taste * 1 Lemon (Nimbu) * 1/2 tsp Sugar * 1 tbsp Oil * Curry Leaves 4-5 * Mustard Seed 1 tsp * Baking Soda 1 tsp For Cooking Put gram flour to bowl and add curd, salt, turmeric powder & sugar. Mix all the ingredients properly and add water as per the requirement to adjust the consistency of the batter.(paste consistency). After proper mixing of ingredients add baking soda and lemon to batter and Put it on rest for 20-30 minutes. On other side put a steamer or a big utensil (u have) on the gas stove. Add water to it and let the water comes to a boil. Then take a plate and grease it with a oil. After proper greasing transfer batter to the plate and put in a steamer (at appropriate height). After 15-20 minutes open the lid of steamer the check the khaman from the center and its edges. Once it is done then take out from the steamer. For Presentation Take a wok and add oil to it. Once oil gets hot then add mustard seed and curry leaves to it along with water(1/4 cup). After that spread this on the top of khaman for presentation.
