Recipe of the Week
Japanese Spinach Salad
Fresh, savoury, slightly sweet and ridiculously easy.
Perfect alongside sushi, salmon, fried chicken or rice bowls.
Ingredients
• 1 large bunch spinach (about 250–300g)
• 2 tbsp toasted sesame seeds
• 1 tbsp soy sauce
• 1 tbsp mirin
• 1–2 tsp sugar
• Tiny splash sesame oil (optional)
Method
1. Toast the sesame seeds until fragrant.
2. Grind using a pestle and mortar.
3. Add soy sauce, mirin, sugar and sesame oil if using.
4. Boil the spinach for 30 seconds.
5. Drain, then immediately rinse with cold water.
6. Drain again and squeeze out ALL the water.
7. Roughly chop the spinach and pour over the dressing.
