[https://www.buzzsprout.com/2309287/fan_mail/new] In this episode of OYSTER-ology, Kevin talks with Dan Worrell of Fallen Pine Oyster Company, farming oysters in the unusual waters of Chincoteague Bay. They explore how wind, salinity, and low-flowing water shape oysters in this shallow coastal lagoon — and how a farmer learns to work with the rhythms of a place that behaves very differently from the Chesapeake Bay that most people think it’s a part of. He describes how growing the perfect oyster is an art that relies largely on gut feelings, careful attention and fearlessness. Also a wine sommelier, Dan compares wine to oysters and the three levels of flavors, as well as the pros and cons of high salinity in still waters and so much more.  It’s a conversation about place, patience, and how the character of the water ultimately becomes the flavor in the shell 00:00 Perfecting the Package 00:23 Into Oyster Country 01:04 Why Chincoteague Bay 04:49 Dan Worrells Oyster Origin 07:02 Taking Over the Farm 09:16 Fallen Pine Name Story 11:46 Farm Size and Growth 13:47 Gear Handling and Craft 17:03 Biofouling and Mortality 19:57 Ice and Wind Driven Tides 24:35 Greenhead Fly Interlude 26:24 Salinity and Oyster Lineup 29:34 Tasting Notes Like Wine 34:02 Sommelier Storytelling 36:27 Markets Events and Toppings 40:57 Closing Reflections Links: Fallen Pine Oyster Co [https://www.fallenpineoyster.com/] - https://www.fallenpineoyster.com/ Credits: Guest: Dan Worrell, Fallen Pine Oyster Company Host: Kevin Cox Digital Deckhand: Chet Jipty Production: OYSTER-ology Podcast LLC If you enjoyed this episode, please FOLLOW, RATE, and SHARE the show. [https://www.buzzsprout.com/2309287/fan_mail/new] What happens after an oyster is eaten?  For Jen Sagan, Oyster Restoration Manager with Friends of the Rappahannock, that's where the story really begins. In this episode of OYSTER-ology, Jen takes us into the muddy, sweaty, and surprisingly rewarding world of oyster restoration. We discuss how discarded oyster shells become the foundation for new reefs, why volunteers are essential to restoring Chesapeake Bay waterways, how oyster restoration and aquaculture work hand-in-hand, and why getting your hands dirty may be the best way to develop a lasting connection to the water. Along the way, Jen shares her journey from the mountains of New Jersey to the tidal waters of Virginia's Northern Neck, explains how oyster reef restoration actually works, and reveals why a lifelong vegetarian spends her days encouraging people to eat more oysters. 00:00 Muddy Oyster Life 00:33 Podcast Intro and Shells 01:22 Meet Jen Sagan 03:57 Friends of Rappahannock 05:04 Oyster Origins and First Taste 07:27 Why Oysters in College 08:31 Shell Recycling Program 10:55 Shell Shortage and Partnerships 12:42 Volunteers and Hands On Impact 16:24 Attracting Volunteers 18:41 Kayak Events and Repeat Helpers 21:40 Rappahannock Setting and New Tank 23:21 Spat on Shell Explained 27:11 Monitoring and Living Shorelines 31:03 Funding and Showing Results 33:55 Day in the Life on the Water 38:01 Big Picture Bay Recovery 39:17 Aquaculture and Misconceptions 42:15 Slightly Salty Sagan Story 46:32 Eat More Oysters Message 47:35 Closing and Call to Action Links: Friends of the Rappahannock [https://riverfriends.org/] website: https://riverfriends.org/ [https://riverfriends.org/] Volunteer Opportunities with Friends of the Rappahannock [https://riverfriends.org/]: https://riverfriends.org/ [https://riverfriends.org/] Slightly Salty Sagen on Instagram [https://www.instagram.com/slightlysaltysagan/]: @slightlysatlysagan Chesapeake Bay Foundation [https://www.cbf.org]: https://www.cbf.org [https://www.cbf.org] Credits: Guest: Jen Sagan Host: Kevin Cox Digital Deckhand: Chet Jipty Production: OYSTER-ology Podcast Please be sure to Like and Follow OYSTER-ology [https://podcasts.apple.com/us/podcast/oyster-ology/id1778880182]wherever you listen to podcasts, and tell others about it. Send a COMMENT to OYSTER-ology here! [https://www.buzzsprout.com/2309287/fan_mail/new] In this OYSTER-ology interview, Kevin speaks with Casey Davidson of Toadfish about creating a product-driven outdoor brand specifically to give back to oyster restoration and strengthen marine ecosystems through better water quality. Casey explains how his coastal upbringing and conservation experiences shaped a conviction that restoring habitat—especially oyster reefs—is one of the most effective, practical ways to help the water and the fisheries that depend on it. He describes Toadfish’s “Put ’Em Back” ethos, focused on recycling shells and funding restoration work through business sales, a dedicated nonprofit, and partnerships with local and regional programs. The conversation highlights the challenges of scaling restoration, the importance of public education and stewardship, and Casey's message that long-term ecosystem health depends on putting more oysters back than are taken out. 00:00 Mission First 00:27 Podcast Setup 04:35 Coastal Roots 05:59 From Politics to Tackle 07:00 Water Quality Wakeup 08:43 Oyster Roast Memories 10:11 Why Oysters Matter 11:41 Classroom Tank Demo 12:27 Starting Toadfish 14:06 Brand and Teal Knife 15:52 Rocket Ship Growth 17:38 Scaling and COVID 19:10 Designing New Products 20:42 Signature Teal Identity 21:42 What Company Is This 22:25 Best Sellers Today 22:33 Getting Into Raw Oysters 23:28 Oyster Boom Explained 24:05 Aquaculture Cleans Water 24:57 Put Em Back Origins 26:29 Shell Recycling Logistics 27:25 Nonprofit And Events 30:52 Scaling Restoration Programs 35:01 Choosing Projects Wisely 36:44 Customer Impact And Stewardship 38:52 Abalone And Finfish Restocking 42:02 Future Products And Final Call 44:58 Closing Reflections Links: Toadfish website [https://toadfish.com/] (https://toadfish.com/ [https://toadfish.com/]) Toadfish Conservation Coalition [https://toadfishcoalition.org/] (https://toadfishcoalition.org/) See the time lapse video of oysters cleaning the water! S3 Ep 44: The Oyster Whisperer, Jason Woodside Shucks Open the PEI Oyster World

Send a COMMENT to OYSTER-ology here! [https://www.buzzsprout.com/2309287/fan_mail/new] Kevin Cox returns with Season 3 of OYSTER-ology! Jason Woodside grew up spending summers on Prince Edward Island, moved back there as a teenager, and somehow ended up at the epicenter of Canadian oyster culture in Toronto — shucking at events, learning from champions, and winning the Canadian title by 2004. That was twenty-plus years ago. Since then he's built knives, launched a magazine, taught hundreds of people to shuck, and become one of the clearest voices in the industry about what oysters actually mean — to the people who grow them, open them, and eat them. In this conversation we cover a lot of ground: the origin story of the Banjo Oyster Knife, the competitive shucking world and the culture that runs through it, and why Shucker Magazine exists — because Jason believes the real stories of the people behind the raw bar deserve to be told before they disappear. We also dig into the mythology of PEI oysters: the iron-rich red soil, the cold winters that condition the animals, and the marketing campaign from the 1950s that created a brand still running today. And then there's MSX. If you haven't been following the disease crisis hitting PEI oyster farms right now, this episode is your primer. Some growers have seen total losses — 100% of a four-year crop cycle, gone. Jason doesn't look away from it. He also doesn't despair. PEI oyster people, he says, come from pioneers. They're not backing down. Plus: buck-a-shuck rants, oyster knife philosophy, what the Mi'kmaq people and oysters have to do with each other, and why Jason thinks $6-a-piece oysters are not actually a victory. * 00:00 Welcome Back & Episode Introduction * 04:34 Jason's Origin Story * 14:13 Competitive Shucking & The Shucker Subculture * 16:26 Why PEI Oysters Are Special * 18:48 The Malpeque Brand & PEI Oyster Industry History * 22:47 MSX & Dermo: Oyster Diseases Explained * 24:19 The Crisis: Mass Mortalities in PEI * 29:42 Shucker Magazine: Behind the Scenes * 34:55 The Banjo Knife: Invention & Story * 38:50 Shucking Technique: Body, Blade & Finesse * 46:46 The Future of Oysters & Final Thoughts Links: Shucker Magazine [https://www.facebook.com/p/ShuckerMag-61558450333114/].  Shellfish Fest, Charletan PEI  [https://peishellfish.com/] Banjo Oyster Knives [https://cascumpecbayoysterco.com/product/banjo-oyster-knife/?srsltid=AfmBOopQijAjKMbIZYLO4QaEkx1fGT4gH9PdUpUn76lJYTDtC4pjRafJ] Rodney’s Oyster House, Toronto [https://rodneysoysterhouse.com/] Credits: Guest: Jason Woodside Host: Kevin Cox Digital Deckhand: Chet Jipty Production: OYSTER-ology Podcast Contact: kevin@oysterologypodcast.com Please be sure to Like and Follow OYSTER-ology [https://podcasts.apple.com/us/podcast/oyster-ology/id1778880182]wherever you listen to podcasts, and tell others about it. [https://www.buzzsprout.com/2309287/fan_mail/new] The Shellfish Confessional at the 9th annual Oyster South Symposium At the 9th annual Oyster South Symposium in Houston, OYSTER-ology host Kevin Cox debuts the first “Shellfish Confessional,” through collaboration with Oyster South and The Nature Conservancy. Inviting oyster farmers, shuckers, and industry voices to admit what went wrong in their work, participants share candid stories about service shortcuts, shucking injuries, emotional strain, bad weather and the hard realities of aquaculture. Some of these Confessions included losses from bad decisions, gear and temperature mistakes and uncontrollable events like storms and ice, alongside frustrations with regulations and public misconceptions. The episode highlights these “sins” as lessons that reveal toughness, humility, and devotion to oysters, blending humor and oyster-world mythology. It then closes with playful penance rituals and the recurring aim of the business: “Kill less, sell more.” 00:00 The Shellfish Confessional 02:37 Shucker's Code 06:37 Stabbing Yourself 09:41 Emotional Shucking 15:06 Killing Oysters 18:02 Going Sideways 18:40 Nature Doesn't Care 22:56 Battling The System 25:26 The Gospel According to Oysters 29:21 Sometimes It's Personal 30:30 Annonymous Desires 32:00 In Defense of Oysters 33:41 If Oysters Could Talk 35:38 Penance & Relief 38:50 Reflections Links: The Nature Conservancy [https://www.nature.org/en-us/] -  Special Sponsor of the Shellfish Confessional Oyster South [https://www.oystersouth.com/] - Sponsor of the Shellfish Confessional Credits:  Special Thanks to The Nature Conservancy for its generous support of the Shellfish Confessional.
