Ingredients: • Chicken breasts • Flour • Salt and pepper • Garlic powder (optional) • Olive oil or butter • White wine, chicken stock or broth • Lemon juice and lemon zest • Garlic • Capers • Butter (optional) Method: 1. Slice and flatten the chicken breasts. 2. Coat lightly in seasoned flour. 3. Sear on both sides and remove from the pan. 4. Deglaze the pan with wine or stock. 5. Add lemon juice, zest, garlic and capers. 6. Stir in butter if desired. 7. Return chicken to the pan and cook through. 8. Serve with pasta or potatoes (if your kids don't like pasta!) A warm, funny and honest conversation about friendship, family, ageing and navigating midlife with plenty of laughs along the way.
