Ep 2: Our Boundaries and Our Growth

The Covid-19 virus originated in Wuhan, China in the Fall of 2020 and has spread across the globe, claiming the lives of thousands of people. To us now, wearing masks and social distancing is a reality, but also- growing blame and hatred towards Asians has also become a reality during these times. Join us as we speak to Dr. Justin Chen and Dr. Juliana Chen at MGH and Harvard Medical School and Running Mayor Candidate Michelle Wu about how the virus and other various stereotypes or aspects have altered many Asians' safety, mental health, and more in Ep. 2 Michelle Wu for Mayor: https://www.michelleforboston.com/ [https://www.michelleforboston.com/] Dr. Justin Chen: https://www.mghstudentwellness.org/ [https://www.mghstudentwellness.org/] For more resources and ways you can help support AAPI communities please visit: https://standwithasianamericans.com/ [https://standwithasianamericans.com/] https://aapip.org/what-we-do/supporting-api-communities-resource-directory/view-all-resources [https://aapip.org/what-we-do/supporting-api-communities-resource-directory/view-all-resources] https://aapip.org/who-we-are/chapters/boston [https://aapip.org/who-we-are/chapters/boston] This episode was edited by Audrey Xiao. Ep 1: Defining our worth and perspective

In the US, discrimination against Asians has always been prominent in our society. Yet in this year, 2021, the number of hate crimes against Asians in the US has risen over 150%. In our premiere, we invite members of our BUA community, students and alum, and a BU Professor to discuss the recent increase in Anti-Asian Hate crimes including the recent shooting in Atlanta, our own definition of being Asian, and a brief introduction to our culture. Join us as we cover these sensitive topics regarding our identities and our own opinions. A big thanks to Kaeleen Chen, Judy Ye, and Prof Takeo Rivera for sharing their stories. The recipe of the month: Scallion Pancakes Ingredients for dough: 2.5 cups flour 3/4 cups hot water 1 tbsp sugar(can be omitted) 1 tsp salt Ingredients for the filling: 2-3 bunches of scallions 3/4tbsp of Vegetable Oil 1/2 tbsp flour Chinese five-spice powder (McCormick-Culinary-Chinese-Five-Spice)(cinnamon, star anise, fennel seeds, peppercorn (Chinese), white cloves) 1. Combine flour, sugar, and salt in a bowl. Add in hot water slowly while stirring and then knead until a soft, unsticky dough ball is formed. 3. Put the dough in a bowl and cover with a wet towel, rest for 30 minutes or more. 4. Chop scallions and combine with oil and flour in a small pan on small heat. Cook until the scallions are slightly soft and flour is dissolved completely. 5. Split the dough into 5-6 portions. 6. Roll the portioned dough as flat as possible and sprinkle some of the scallion mixture and some five-spice. 7. Roll the dough with filling inside like a cinnamon roll into a log with the filling swirled in the inside. 8. Flatten the dough slightly with the swirl-faced up in a pinwheel. (It doesn't need to be super flat, you will further flatten it after) 9. Let rest for 20 minutes or repeat steps (6-8) for the remaining dough balls. 10. Roll out dough to as thin as you wish (pretty thin) and pan fry each side until golden brown! Garnish with more scallions and some salt if you wish!
