Jason Woodside grew up spending summers on Prince Edward Island, moved back there as a teenager, and somehow ended up at the epicenter of Canadian oyster culture in Toronto — shucking at events, learning from champions, and winning the Canadian title by 2004. That was twenty-plus years ago. Since then he's built knives, launched a magazine, taught hundreds of people to shuck, and become one of the clearest voices in the industry about what oysters actually mean — to the people who grow them, open them, and eat them. In this conversation we cover a lot of ground: the origin story of the Banjo Oyster Knife, the competitive shucking world and the culture that runs through it, and why Shucker Magazine exists — because Jason believes the real stories of the people behind the raw bar deserve to be told before they disappear. We also dig into the mythology of PEI oysters: the iron-rich red soil, the cold winters that condition the animals, and the marketing campaign from the 1950s that created a brand still running today.
