Colin Denton is a Vancouver-born restaurateur and hospitality entrepreneur with more than two decades of experience building some of Canada’s most celebrated restaurant concepts. After studying business and marketing at Capilano University, Colin spent over 10 years with Cactus Club Cafe, helping lead and open major locations across the country, including the brand’s flagship in Toronto. He later joined the opening team behind Baro, one of Toronto’s most talked-about restaurant openings at the time, before returning home to Vancouver to become an owner and operator of Kokomo, where he grew the plant-based brand into a city staple. Today, Colin is the co-founder and operator behind Dovetail, one of Vancouver’s buzziest dining rooms, and is currently developing its sister concept, Bevel.
