The Language of Food
This podcast argues that modern nutrition science must evolve beyond simply measuring calories and nutrients. While traditional methods successfully addressed deficiencies like scurvy, they have struggled to curb the rise of chronic diseases such as diabetes and heart disease. Food as Information views food as a form of biological information that communicates with our bodies and gut microbes rather than just fuel or isolated nutrients. By examining the interactions among different dietary compounds, the meaning of food changes depending on its molecular environment. This framework shifts the focus from isolated numbers to a more nuanced grammatical approach to Food as Information.
