Today's episode will be about how to make Pad Thai and how to know when your date is ready to put out. Recipe: Pad Thai Ingredients 8 oz. Rice Noodles 1 tbsp Canola oil/veg oil ½ lb. Shrimp (10-12 shrimp if you purchase 16/20s) or 1-2 cups of cubed chicken 3 eggs 2 cloves of garlic chopped For sauce: 1 tbsp soy sauce 1 pinch cayenne 2 tbsp rice vinegar 1 tbsp fish sauce 2 tbsp brown sugar pinch crushed red pepper 1/2 of a lime juiced Veggies: 1 cup bean sprouts 1/4 cup green onions 1 cups of shredded  carrots (or julienned) Garnish: Lime wedge 1/2 tbsp Cilantro 1 tbsp Roasted Crushed peanuts(optional) (you can use store bought sauce if you need it to be easier) I like the "Thai" brand with black lid Thai also has rice noodles 1. Soak rice noodles in cold water (ice water will speed up the process for 15-20 min) for 30 minutes. until limp, but slightly firm (half chub style) drain and set in colander. Put sauce ingredients together in a bowl. 2. Put oil and garlic in pan on med-high heat add shrimp or chicken. Add a splash of soy sauce for flavor and a little (pinch) black pepper. Cook shrimp until pinkish or cook chicken until 140 degrees (F). Push meat to one side of the pan. 3. Crack whole eggs into pan on one side of the pan and mix until they are still and/or fluffy. 4. Add carrots, bean sprouts, green onions on top and they will steam for about 3 minutes. 5. Then add rice noodles. Let them cook while mixing together with the other veg. for 2 minutes. 6. Add your sauce and lower heat to med-low. Let cook and marinate for 3-5 minutes. 7. Pour in bowl and top with crushed peanuts, cilantro, and side lime wedge.
