The unique thing about this coffee is that the green beans were aged in a Pinot Noir wine barrel, that had also been used to age Gin. The folk at Firsthand did this before it was roasted. Welcome to the second installment of the BEAN OF THE MONTH. A short, espresso sized nugget of fun where I get to recommend a great coffee I think you’ll love. July’s Bean of the month is Chilled Out Coffee Roaster's’ Los Azacuances [https://chilledoutcoffee.co.nz/collections/new-s-o] This month’s BEAN OF THE MONTH is the Los Azacuanes, [https://chilledoutcoffee.co.nz/collections/new-s-o] grown in El Salvador [https://en.wikipedia.org/wiki/El_Salvador] and roasted by Jo from Chilled Out Coffee Roasters [https://chilledoutcoffee.co.nz/]. This coffee has something for everyone, from the everyday coffee drinker who just wants an easy coffee, to the hard core coffee enthusiast. The Los Azacuanes is well rounded. By that I mean in most brew methods, it has a bit of everything you want from a coffee – a bit of sweetness, a bit of bitterness, a bit of acid – all working in harmony to make a really pleasant and easy to drink coffee. The great thing about this coffee is that through different brew methods, you can really bring out different characteristics. In the AeroPress [https://aeropress.com/]the sweetness shone through. In the stovetop moka pot [https://themagicroast.substack.com/p/making-more-moka-pot-madness]a pleasant acidity came out. In the plunger, it was juicy and light.   That’s what I really love about this coffee – it’s like three coffees in one, and depending on your mood, you can play with it to taste like nothing else. My brew recipes I tried this coffee in a range of brewers, so anyone at home could find a great way to brew it. So, in no particular order, here’s my brew recipes for this coffee. AeroPress * 20g of coffee - fine/medium grind size * 230g of water at 95 degrees * 1:45 minute total brew time * Inverted * Do a 70g bloom pour and let that hang for 30 seconds. Then give it a swirl for 15 seconds. At 45 seconds put in the rest of the water so you get a total of 230g of water. Let it rest until 1:45 minutes, put on your cup and press for 30 seconds. Stovetop Mokapot * 28g of coffee - fine-ish grind. No where near an espresso grind. Slightly (slightly) finer than a V60. Don’t go too fine. * 280g of water * I have previously written about my Mokapot method. [https://themagicroast.substack.com/p/making-more-moka-pot-madness] Put boiling water in the bottom chamber, put it all together and let it sit on a low heat on the stove with the lid open. Don’t brew too fast otherwise you’ll burn the coffee. Let it brew and as soon as it starts to splutter everywhere, cool down the chamber. Serve. Plunger/French press * 30g of coffee - medium grind. Shoot for like a Chemex grind. No where near a coarse grind. A solid medium. * 500g of water at 95 degrees. * 8:00 total brew time. * I used the James Hoffman method [https://www.youtube.com/watch?v=st571DYYTR8]. Basically, water onto the coffee, stir, scoop of the scunge, then let it sit for up to 8 minutes. A long time, but worth it. Then plunge down only a small way - the filter is there to keep the big bits out. Serve. * Remember, if you don’t own a French press, you can use an old boot. Welcome to the first edition of the BEAN OF THE MONTH. A quick and easy 2 minute segment where I tell you about a coffee you need to drown your mouth bones in. Got to be quick, got to be fast. Have a listen and then have a read! Straight off the bat - thanks to Tom for this amazing segment idea. He gets 50% of all proceeds as royalties! Make it worth his while. June’s Bean of the month is Firsthand’s Specialty Instant Coffee [https://firsthand.coffee/products/instant-coffee]. Coming out strong with an instant coffee as the first BEAN OF THE MONTH is bold. There are so many great “specialty” coffees to try, instant might feel like a weird choice. However, this blog is for coffee lovers of all types, and this instant coffee genuinely gets me excited, so lets start here. So, why choose instant? Instant coffee has a bad wrap, and in many cases, justifiably so. But it doesn’t have to be bad. Specialty instant coffee is great for people who don’t want to compromise taste, even if time or convenience isn’t on their side. Firsthand’s specialty instant is an amazing coffee [https://firsthand.coffee/products/instant-coffee], that is easy to make, can be made anywhere you are, and wont let you down. It’s not cheap though at $30 a pot. For that you get about 20 serves so around $1.50 a serve. This does mean it’s more expensive than a supermarket instant, more expensive than a Nespresso pod (but Nespresso is evil) [https://themagicroast.substack.com/p/nespresso-good-or-evil?s=w], and a lot more expensive than brewing a V60 or swiss gold from beans. BUT the instant nature of it means you don’t need any equipment, just a cup and some water. Once you take into account taste, convenience and flexibility, it’s actually amazing value. I reach for the instant on those Sunday mornings when I am just too tired (or when the weather has been so bad my sleepout flooded), or the kids are too noisy, to brew a soft brew. I also reach for this on holiday – it’s replaced my Aeropress as my go to holiday brew. Protip - you’re not brewing it! Protip thanks to the amazing The Drumming Barista: [https://thedrummingbarista.substack.com/] you’re not brewing this, rather you are dissolving it. So don’t use boiling water! Aim for about 80 degrees. If you have a thermometer, great! If not, boil the jug, open the lid and let it sit for 5 minutes. Have fun with it Firsthand’s instant is so good, you can really have some fun with it. The Drumming Barista [https://www.instagram.com/thedrummingbarista/] has a great write up of instant coffees on his blog. During the instant coffee week over on his instagram, he made it hot, cold, and as a flat white! He even made an espresso martini with it!
