Meet Nidhi Arora DiFelice, lover of chai, lentils, and all foods that don't come in cans. Nidhi has been living in the US, Philadelphia area, to be precise, for over 11 years. A vegetarian by heart and choice, growing up in India watching her mom, grandmom, and aunts cook food using simple ingredients. She is passionate about food and sharing the ancient recipes she has learned from her culture and family. Nidhi feels most people in the West struggle to eat vegetarian food because they genuinely don't know enough recipes and the simplicity of creating that food. Mimi has been working in mental health for over 7 years and has a Masters degree in Counseling. Mimi has experience providing counseling to survivors of trauma in both residential and community-based programs. She also spent 3 years leading a women’s ministry with her church.
